Alignment Corn Muffin Recipe

 

Ingredients

1 cup course ground blue cornmeal

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/8 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

1/3 cup maple syrup

2 Tablespoons honey

1 large egg, at room temperature

1 cup whole milk yogurt, at room temperature

 

 Instructions

  1. Preheat oven to 400°F. Grease and lightly flour an 8 or 9-inch square baking or muffin pan. Set aside.

  2. Whisk the cornmeal, flour, baking powder, baking soda, and salt together in a large bowl. Set aside.

  3. In a medium bowl, whisk the melted butter, maple syrup, and honey together until completely smooth and thick.

  4. Then, whisk in the egg until combined.

  5. Finally, whisk in the yogurt.

  6. Pour the wet ingredients into the dry ingredients and whisk until combined. Avoid over mixing.

  7. Pour batter into prepared/buttered baking or muffin pan. Bake for 20 minutes or until golden brown on top and the center is cooked through.

 

Serve cornbread with butter, honey, jam, or whatever you like. Optional additions: 1-2 chopped jalapeño peppers, 1 cup blueberries or dried cranberries and walnuts, 1 cup shredded cheddar cheese, or 1/2 cup diced bacon.
